To prepare this recipe, fill a bowl with quick cooking rolled oats. Take two corn tortillas and top each of them with about a tablespoon of salsa and a tablespoon of shredded, reduced fat cheese (we prefer cheddar, but you can pick your favorite). While the tortillas are cooking and waiting in the microwave, put some nonstick spray on your nonstick skillet and heat it over medium heat. Add in your egg substitute and stir the eggs until they are fully cooked through. This should only take about ninety seconds. When your scrambled eggs are done, simply divide them between the two taco shells. That’s all it takes to make this healthy, delicious breakfast!
